– ¼ cup mayo (optional – adds creaminess)

The Bowl Components:

– 2 sweet potatoes

– 1 red onion

– 2 tablespoons avocado oil

– 2 tablespoons taco seasoning (add a pinch of smoked paprika for extra flavor if desired)

Instructions:

1. Sweet Potatoes: Preheat your oven to 425 degrees. Peel and cut the sweet potatoes into your preferred shape (wedges are recommended for that satisfying “thick, happy fries” experience).

Place them on a large baking sheet and toss with avocado oil and taco seasoning until evenly coated.
