Most Lagos residents are familiar with this meal, cause it seems like a go to meal if you’re resident in Lagos. Ewa Agoyin is not so common in most part of Nigeria in terms of preparation method. That is not to say other parts of Nigeria do not consume beans.

To cut the long story short, let’s see how to prepare this special beans meal with plantain using these simple steps.

Ingredients:

– 2 cups of black-eyed peas or brown beans

– 1 onion, chopped

– 2 ripe plantains, peeled and sliced

– 2 tablespoons of palm oil

– Salt to taste

Instructions:

1. Rinse and cook the beans in a pot with enough water until tender (about 1-2 hours).

2. In a separate pan, heat the palm oil and sauté the onions until they caramelize.

3. Add the cooked beans to the onions, stir well, and season with salt. Let it simmer for another 10 minutes.

4. While the beans are simmering, fry the plantain slices in a pan with a little oil until golden brown on both sides.

5. Serve the beans with the fried plantains on the side.
