Frog Barbecue

Frog is of the class anthropoda, a species that basically lives in swamp environments. It has long forearms and hind limbs that enable it to jump a great distance. Unlike toad, frog live mostly in water while toad lives both on land and in swamp areas. People usually confuse frog for toad maybe that’s why some people find it disgusting to eat.

The hunter catches frogs basically by night either by matcheting, daggering, or spearing with the aid of a torchlight fastened on his head.

After the hunting, the frog is dissected and the stomach is emptied of it contents after which it is then properly washed and cooked or boiled. Additionally, ingredients and spices are been added (during the cooking process) or prepared separately (while the frog is being per-boiled). Spices like ginger and pepper however are vital in frogging a berbecue.

After the cooking, an additional spice is used in choking the frog (if the initial spicing is not achieved to taste during the cooking process) or after per-boiling it. The spiced or cooked frog is then taken to the platter of hot charcoal on a barbecue pan or placed on a wired string (locally) in a way of smoking or roasting it to allow the ingredients and spices to get into the inner chamber of the frogged barbecue. If this is achieved, usually in remote areas, it is taken to the local restaurant or eatery or market square where it’s been sold and consumed.

Draws are usually eaten along with it, prepared separately to allow the freedom of mastication and digestion. This recipe is usually common in the Benue region and in some cultures in Nigeria but also frog recipe is commonly consumed by the Chinese as well.  Eating frog barbecue with fufu served with draws is far a better meal for supper.
