How to make the Grilled Chicken Salad with Lemon-Tahini Dressing.

Ingredients:

– 2 boneless, skinless chicken breasts

– Salt and pepper to taste

– 6 cups mixed salad greens (such as spinach, arugula, and romaine)

– 1 cup cherry tomatoes, halved

– 1 cucumber, sliced

– 1/4 cup sliced red onion

– 1/4 cup chopped fresh parsley

– 1/4 cup crumbled feta cheese (optional)

**For the Lemon-Tahini Dressing:**

– 3 tablespoons tahini

– 2 tablespoons fresh lemon juice

– 1 tablespoon olive oil

– 1 garlic clove, minced

– Salt and pepper to taste

– Water (as needed to thin out the dressing)

**Instructions:**

1. Preheat grill to medium-high heat. Season chicken breasts with salt and pepper.

2. Grill chicken for 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from grill and let rest for 5 minutes before slicing.
