Cardamom is a highly prized and complex spice commonly used in Indian cuisine. It is the third most expensive spice in the world and comes in two main types: green and black. 

Green cardamom is used in sweeter dishes, while black cardamom is used in savory dishes.

Cardamom can be found in whole pods, shelled whole seeds, or ground powder. When cooking with cardamom, is recommended to start with whole pods and grind the seeds yourself for the best flavor.

Cardamom is used in a variety of dishes, including Indian curries, rice pudding, chai, and baked goods. It also has numerous health benefits, such as lowering blood pressure and promoting urination. 

If you don’t have cardamom, a substitute can be a blend of warm spices like cinnamon, nutmeg, ginger, or cloves.
