Coconut rice is rice in coconut milk or coconut flakes which results in a dish known as coconut rice. Since rice plants and coconuts are both frequently found in tropical regions worldwide, coconut rice is also a common culinary item in many equatorial cultures, including those in Southeast Asia, the Indian subcontinent, South and Central America, West and East Africa, the Caribbean, and Oceania.
To make Coconut Fried Rice, You’d need the following ingredients
INGREDIENTS
Rice
Coconut milk
Chicken
Garlic
Ginger
Red bell (diced)
Green bell pepper (diced)
Carrots (diced)
Green peas
Green beans (diced)
Spring onion (diced)
Onion (chopped)
Sweet maize
Liver
Salt
Grounded pepper
Seasoning cubes
Curry powder
Thyme
Coconut/Vegetable oil
PREPARATIONS
Wash and season the chicken, and liver with some seasoning cubes, salt, curry powder, grounded pepper, thyme, blended ginger, garlic, and onion. Cook for 10 minutes, add some water, and cook until it’s tender. Fry and cut the liver into smaller sizes.
Wash the rice until the water runs clear. Transfer the rice into a pot, add the meat stock and coconut milk. Adjust with salt and seasoning cubes and let it cook until it’s done.
In a pan, heat up some coconut oil or Vegetable oil, add the chopped onions, and fry for about a minute. Add the diced carrots and fry for 2 minutes. Add the bell peppers, green beans, green peas, sweet corn, and cut liver. Add some salt and seasoning cubes, stir, and fry for 3mins.
Properly combine the rice together with the fried Vegetables. Garnish with some spring onion and serve.
