Are you guessing how I make sweetcorn for fried rice with fresh corn at home? Worry no more, with these few points of mine, you will make yours with ease.
INGREDIENTS
Fresh yellow corn
Sugar
Bicarbonate of soda (baking soda)
White vinegar (Preservative)
Salt
Water
A glass jar
PROCEDURES
Separate the corn grains from the cob.
Wash and add to a pot, pour in enough water, add little salt & a teaspoon of bicarbonate of soda then boil till it’s done and edible. (If your corn is not yellow enough, you can drop in a small quantity of fresh turmeric into the boiling corn grains, to give it that shiny yellow color).
Once it’s done, sieve out excess water and pour the corn grains in a glass jar. Now add 2 or 3 tablespoons of sugar, a pinch of salt and few drops of white vinegar.
Boil hot water and pour into the corn jar, pour at least till the water covers the grains, stir very well with a spoon and cover.
You can start using at once or from the next day. The more it stays in the jar and water, the more soft it gets. Enjoy!

Note: This can last for at least one week or more with or without freezer. You can also replace the vinegar with fresh lemon juice, they serve as a preservative.
